Why a piece of chapati tastes sweeter after chewing for some time

When chapati is chewed for some time it taste sweeter because, as you know chapati is carbohydrates and it presents starch

 When salivary gland secrets saliva, then it breaks carbohydrates into simple glucose that is hexose

moreover it contains maltose . so it tastes sweet
