Acetaldehyde i.e CH3CHO is more reactive than propanaldehyde towards formation of cyanohydrin due to less steric hindrance.
HCN is added for reaction and it breaks into H+ and CN-.
CN- act as nucleophile and in propanaldehyde greater +I effect is present due to this nucleophilic reaction readily occurs on acetaldehyde because it has less +I efffect.
