Herbivores eat plant matter which is difficult to digest because the nutitious parts of the plant are inside the plant cells and are surrounded by a cellulose cell wall.
No mammal can digest cellulose using only its own self-produced enzymes.
The herbivores rely on the bacteria present in their alimentary canal for the digestion of cellulose.
In addition the plant matter must be chewed thoroughly in order to aid in cell wall breakdown.
Herbivores therefore need longer guts because the digestion process is slower. It is essential for the herbivores to absorb every bit of nutrient they can.
Thus they have a longer alimentary canal.
