Why are exhaust fans fitted on the ceiling of the kitchen

Fans are fitted near the ceilings or on the sides of the walls due to the convection current as the warm and light air rises up and escapes through the fan....and fresh air comes inside the room through windows as the air is cooler and heavier with respect to the air that was ventilated out of the room....
