Seeds have endosperm which serves as food storage for the growing plant in the future.

This stored food converts into diffusible form so that the growing plant can use it in the future.

Due to the action of water food in the endosperm changes into proteins, fatty acids, vitamins and other nutrients.

This makes germinated seeds more nutritious.
