A shadow is formed when there is an Opaque object of considerable size in the path of light rays. There is no source of light in the region of the shade. So there are no light rays emanating from the shadow region and falling on our eyes. We sense the absence of white light in that region. That is why the region appears dark.
When we see an object, light rays which are reflected from object fall in our eyes. If a lot of red colored light is reflected from the object, then we perceive it as red object.
