This accounts for the use of sulfur in methionine; replacement of the sulfur with oxygen would result in a much less hydrophobic amino acid. Cysteine readily forms disulfide linkages because of the ease with which it dissociates to form a thiolate anion

Similarly,amino acids are one of the most important chemical compound which is also a biochemically important compound.

Sulphur containing amino acids are less hydrophobic that's why they are more reactive and strong type of amino acids.
