Heya dear user !!!
Here is your answer,
==================================
Plastics and woods are poor/bad conductor (insulators) of heat.
==================================
And as many utensils are made up of metals and if we touch them when they are heated we may get injured.
So, to not get injured the handles of cooking utensils are made up of plastics and wood.
==================================
Hope it helps.
