There are many species because of selective breeding. Selective breeding is when humans choose which animals will breed with each other in order to get the required characteristics. For example, a farmer has many cows at his farm. He wants to produce cows which will give a lot of milk. So, he will choose the cow which produces the most milk and make it breed with the bull. The farmer will continue to breed until he gets the required characteristics.
