The cutting tools have sharp edges because the sharp edge has less surface area and it can easily cut through objects. Also we can exert more pressure on less area surface. And we all know thag lesser the area more the pressure.

For example :- it is easier to cut an apple from the sharper side than blunt because the sharper side has a less area.
