Why atomic number increases by emission of an electron?

Answer:

This is because, the beta particles emission happens from the nucleus. Inside the nucleus the neutrons can be represented as a proton + electron and hence proton become a neutron - electron. As the number of proton is increased by 1, there is an increase of atomic number by 1.
