Because oxygen is added from air to copper and copper oxide is formed. 2Cu + O2→ 2CuO. If hydrogen gas is passed over this heated material CuO,The black coating on the surface turns brown due to reverse reaction and copper is obtained. ... If substance gains oxygen during a reaction is called oxidised.

When it reacts with oxygen it forms copper oxide which is black in color. If however, the metal is allowed to react with hydrogen, the black copper oxide will turn back to its red metallic color and also result in formation of water.
Yet again, if air is passed over copper, the metal will get oxidized again, forming black copper oxide.
