Why cat is CAT why not KAT​

There is no reason why other than the C got there first. It very well could have been Kat. According to etymonline , the first version appeared in Europe as Latin catta around 75 C.E. Other variants did use a K through out the ages, but the English version used catt around 700 C.E. and it stayed that way.
