Why cocunut becoming pink in inside after a while?

Occasionally coconut water will turn pink. The color change can happen when phenolic compounds found in coconuts are exposed to oxygen. These phenolic compounds, which are also found in many other plants, often have chemo-preventive properties (eg., anti-oxidant, anti-carcinogenic, anti-mutagenic and anti-inflammatory effects). The concentration of these compounds vary from plant to plant and therefore coconut to coconut. This discoloration is not related to poor harvesting practices and the water is safe to drink.
