White objects in nature appear when the light is reflected on the object. Usually there are colors that do not exist in the visible spectrum and are therefore reflected and give the impression that we are seeing white. So, as you have guessed, casein and some of the milk fats divert the light evenly, making it look white in our eyes. Without the fats and casein, the milk would look blue or even red. When the fat is not uniformly distributed, the milk gets a small dose of the blue color.
Milk also contains riboflavin, which can give the milk a slightly green complexion if its concentration is large enough.
Another hue that you can occasionally see in milk is the yellow color. This is due to small amounts of carotene found in milk.
