why cream separates from milk on churning.

It is due to the process of centrifugation which is a process of separating the components of a  mixture by continuously rotating the mixture at a very high speed.

The process by which mixture is separated through spinning or churning is called centrifugation.In centrifugation denser particles are forced to remain at bottom and lighter particles stay at top when we spin them rapidly . In cream and milk cream is a denser particle than milk .

So cream remain at bottom and milk will be at top . So by this process if we churn
