The reason a refrigerator helps to slow this down is because those enzymes responsible for causing the oxidation slow down when they get cold, so the colder it gets, the slower the browning occurs. Apples turn brownbecause of a chemical reaction called "oxidation", which is caused by oxygen from the air.

Hey mate!!!
Apple contains Iron compounds in it. So due to the oxidation of the iron present in the apple, when cut in pieces, the apple turns brown due to rusting as exposed to air.
