A dried Leaf's stoma or guard cell which normally open and close to limit the water input/output mostly protect the leaf.
Once the leaf has been detached from the stem,it would be only a matter of time before this cell would die and thus freely allow water to enter the layers of the leaf. The leaves may also float due to dissolved gaseous such as O2 and CO2 that are lighter than water.Small stones or pebbles sink at the bottom of the water because they are more dense and heavy than water.
