Acids do not show acidic behaviour in the absence of water , because there is no formation of hydrogen ions, hence ionisation does not occur .

acids not show acidic behaviour in the absence of water because in the absence of water ,acids not produce H+ ions.acids produce H+ ions only in the presence of water.so we know that the acidic behaviour shown by acids is due to presence of hydrogen ions.hence in the absence of water it not show acidic behaviour at all
