Why do acids produce ions in aqueous solution

Because water has property Dielectric constant or other thing we can say when water breaks it produces H+ and OH-  as water is formed from H2 and O2 then the slightly + charge of H  and - charge of O2 with high electronegativity (only of O2) so after desolving acids these charges attracts the ions  (acid)  weaken the electrostatic force between compound(acid) and breaks bond which result in ionization of ions .
