Answer :

This is facilitated by osmosis. When the leaf is placed in water ,the guard cells draw water by osmosis into their cytoplasm making the cells turgid.

This keeps the stomata open and also the leaf remains alive for a longer time.

This is the reason why we put leaf peel in water .
