when fruits or vegetables are cut , the cells in that area are damaged and enzymes are exposed to the air inside the fruit or vegetable , causing them to turn brown.

Because the acid present in the cut vegetables react with oxygen and they pick up a brown colour. Thus to prevent brown colouration we should soak the cut vegetables in water.
