Yeast helps in fermentation of the batter. They respire anaerobically and this changes the taste of the food made from the batter edible and tasty. It also makes the batter usable for few more days. The previous day batter can also be added to the newly made as there is few yeast in it and it is fermentated. This is the reason for Idli and Dosa makers adding yeast or previous day made batter to newly made one.
