Because water has a high specific heat capacity. This means it is harder (takes longer) to heat up or cool when compared with land.
It absorbs heat throughout the day and air above it heats up, at night land cools much faster so although it might get cold inland on coasts nights will generally be warmer as the water doesn't loose heat easily (with breezes from land to the sea), and during the day the land heats up much faster than the sea which had the entire night to cool down, so the days will be colder than inland (with a humid breeze from sea to land).
