Because they need water in the process of photosynthesis which helps plants make food. Without that, they would die.

in summer the temperature is to high and transpiration increase in plants cause water deficiency in the cell of plants.so plants need water for photosynthesis, transpiration and etc. water is not enough for plants. as a result plant die.
