Why do potato chips manufactures fill the packets of chips with Nitrogen gas?

Answer:

This is done in order to flush out any air or oxygen present in the packet. In the absence, potato chips will not get rancid. Please note that Nitrogen gas is very little reactive chemically and does not favour rancidity.
