Because there was no paper at that time and if it was recorded on stones it would be there for a long time

Rulers and kings in the ancient times recorded their victories on the hard surfaces like rocks and pillars to keep a permanent record.
They used to mark and scribble on the rock or other hard surfaces that would not perish away easily and would be able to stand by for years to come and weathers to follow and would keep a record of the wars they have won and hence significantly convey and spread the information about the benchmarks they have crossed amongst the next generations to come.
Back then there were no printing press or other forms of modern telecommunication and hence to keep the record of the achievements they chose for such hard and natural structures.
