Why do the people of India have variation in their food ?

Answer:

Food habits are based on which crops are grown in that definite region. Whatever is grown in that region is easily and locally available and hence food recipes would be based more on that particular grain grown in that region.

Moreover, it is said, we should eat locally grown food since the soil where we are born and have stayed all life would be compatible to our body’s digestion and assimilation processes.

We also develop taste for the food we have eaten from childhood and for any new food type, we have to acquire the taste which is generally not possible. May be that is because of the compatibility of the soil with our body as I mentioned above.

Thus, Northen region food habits are based on grains like wheat and Rajma etc while Southern region food habits are based on rice.
