Answer:For the process of digestion to take place the most essential enzyme is HCl. It is poured into stomach by special cell present in stomach. HCl is present at a very low pH of 1.8 in our stomach. But, stomach has a mucosal lining which prevents corrosion of its wall. So, if this highly concentrated HCl comes in contact with the oesophagus or the small instestine(duodenum) it may damage the walls or perforate them.
So, for the HCl to be kept only in stomach; has two muscular sphincters to hold the HCl. One, present at upper part of stomach connecting to oesophagus called "gastro-oesophageal sphincter". Second, present between end of stomach and starting of small intestine(duodenum) called the "pyloric sphincter". When food enters the stomach, these two muscular sphicters close and the food gets processed for further digestion.
