We sprinkle water on roads in summers because when the sprinkled water evaporates it takes from the road and surrounding latent heat of vaporization leaving the surrounding cool. This act is based on the cooling effect of evaporation.

I think it Because water will need so called Latent Heat of vaporisation from the road to get converted in water and in this way it will draw heat from the road and becomes vapour and the road becomes cool
