There are many benefits of cooking food in oil. few of them are mentioned below:

-We can raise the temperature of oil to 170-220 C, whereas cooking in water, the maximum temperature we can achieve is 100 C.

-It adds flavor to the food. Moreover, it helps in the absorption of all fat-soluble vitamins in vegetables.

-Moreover, edible oil is beneficial to human body. It contributes to our body's major organs and their functionality.

Sources: We have animal as well plants sources to obtain oil. Plants based oils are mustard oil, sesame oil whereas animal based includes vegetable ghee etc.
