It is advised to boil the leaf which is destarched in a water bath with alcohol because the steam that is produced from the water helps in dissolving the pigment chlorophyll of the leaf. It is done to remove the pigment chlorophyll.
Thus, in this way the leaf becomes decolorized and so we can test properly whether starch is present or not in the leaf by treating it with iodine.
