A balloon bursts if we keep on blowing the air in because the air pressure inside the balloon increases which leads it to burst.

Hi Friend!!
Its very simple!!
Balloon is generally made of rubber, which acts like an elastic!
When we keep on blowing the balloon, the air pressure inside also keeps on increasing...
Now there's a certain limit beyond which the balloon won't expand more.!
In a closed balloon, the space remains fixed and isnt increasing...When we blow air into it, and, all the space is filled, then it will ultimately burst!!
There's so much pressure created within the balloon that it can no longer withstand it and hence it burst!!
Got it?!
Hope that helps you friend!!
