Carrot is said to be an underground root of a plant. We all know that the main function of the root is to absorb water and minerals from the soil so that the other parts of the plant ie. the leaves can make food for the plant's survival.
Here when the carrot is being dipped in the red ink solution it absorbs it as it is its function.
We should also note that the carrots have small pores in their body so that it could absorb the liquid in which it is dipped according to the theorem of capillarity ( Body with small pores can absorb anything in aqueous form very easily. e.g. : tissue paper can absorb oil from oily substances very quickly )
