why does a chapati taste sweeter after chewing for a while?

This is because the chapatti is made of various carbohydrates like maltose, iso- maltose, starch, fructose, etc.
Now there is an enzyme in the mouth called ptyalin in saliva which breaks down all complex carbs into maltose & some starch which are sweet. But his only occurs when one chews extensively & there is adequate quantities of ptyalin.

when you chew your chapati for couple of time the saliva secreated by salivary glands get mixed with food which breakdowns starch into maltose and dextrin which are type of sugar so it becomes sweet.
