Why does betacyanin come out from beet root when boiled but carotene from boiled carrot does not?

this is because betacyanin is stored in the vacuoles where has carotene is present in the chloroplasts. so on boiling the water soluble betacyanin comes out of the vacuoles where is the insoluble carotene stays in the chloroplasts.
