because the egg is rich in protein And the proteins found in eggs are in the form of amino acid strings.when you heat the egg the protein chains breakdown .now as the temperature rises these proteins gain energy and can thus form stronger bonds with other proteins meanwhile the water that used to surround the protein when the egg was in liquid form is pushed out which in result makes the egg hard.
Whereas pasta doesn't have that amount of protein that eggs have.
