Curd sets faster in summer than winters because the bacteria in milk needs warmth to transform milk into curd. In summer, temperature is higher and doesn't need any external heat but in winters it takes time and we have to give external heat so as to prepare a good quality curd as surrounding temperature is low and good favourable to make curd.
