Lateral inversion in mirrors is an illusion produced because we are used to looking at people who, appearing before us, have been rotated 180 degrees from the direction we are looking. So we are used to seeing another person, and automatically invert left and right.

The light rays which come from the object get reflected from the plane mirror and reaches our eyes. At this point of time our brain feels that the reflected ray is coming from inside the mirror. This is the reason why the object seems to be laterally inverted.
