SKY apperars BLUE because:
When the sunlight enters Earth's atmosphere, the small molecules of air i.e N2. O2 etc scatters the blue light present in the sunlight. This is because blue colour has small wavelength therefore it scatters more in the atmosphere.
Delayed SUNSET and early SUNRISE happens because:
The light rays comming from the sun has to cover more distance in the atmosphere. So, the light gets bent due to atmospheric refraction.
Therefore during sunrise its apparent position is higher whereas its position is down during sunset.
