why does the colour of cut slices of Apple brinjal potato often brown colour when left is open

This occurs mainly due to OXIDATION which is somewhat like rust on the surface of the fruit... This is because when we cut the fruits we damage the cells protective covering which then allows oxygen to enter the fruit. This oxygen reacts with enzymes and chemicals in the fruit resulting in the change in color.
