When the milk is left at room temperature for the whole day, it results in oxidation reaction and growth of microorganisms following which the milk gets sour.

We can prevent it by refrigerating and storing at a temperature between 35 and 40 degrees. The growth of bacteria get accelerated above this temperature and result in the conversion of milk into curd, thereby spoiling the milk.
