the temperature remain constant because the heat which is provided to the substance is used in breaking up the intermolecular force of attraction due to which there is no change in temperature

Latent heat is called evaporation heat or boiling heat. That is because when it reaches the boiling point or melting point , the substance starts changing into other state , for eg : water when reaches 100 C it starts melting ie changing it's state so the temperature at that moment remains constant
