water kept in the earthen pot tends to become cool as the earthen pot has minute holes in it. the water seeps down to the surface of matka where these pores are present .thus the water then flows out from these minute pores and evaporates heat from the pot equivalent to the latent heat. by the occurence of phenomenon of evaporation a cooling effect is caused.
