Water gets evaporated quickly through the pores. Cooling is caused by evaporation. Some heat energy is utilised during the process of evaporation. Since this energy is taken from the water itself, it leads to a lowering of temperature in the remaining amount of water.

earthern pot is also called as matki contain small pores and water slowly slowly comes out and gets evaporated through these pores . In this case cooling is caused by evaporation . The energy needed for evaporation is taken from the water kept in the earthern pot. Since this energy is taken from the water itself, and now the temperature gets lowered in the remaining amount of water.
