because earthen pots have many mini holes through which water continuously evaporates,Thus, absorbing heat of pot for ganing energy for evaporation and making pot and water in it cool.

We know that Evaporation leads to cooling.
The earthen pot has small pores (by default) so when the water in it comes on the surface of the pot and then in contact with the atmosphere it gets evaporated which in turn makes it cold.
It is observed that we don't use the earthen pot for a long time as the pores gets filled up with dirt or fine particles.
Therefor we can easily conclude why water does not remain cold in metal vessel.
