it does not seek out it is because the water molecules present in air when come in contact with the cool bottle it lose its kinetic energy and turn into its liquid form

cold water present in the bottle make the bottle's temp. cool and so when the water vapour present in air condences it turns into water ( as due to low temp. water turns into ice just like that vapour due to low temp turns into liquid form ) .
