why electric bulb or tube light doesn't blink even it uses alternate current.

If you are talking about incandescent lamp then yeah they don't flicker. Because temperature of filament does not change 100 times a second.

But tubelights and CFLs do blink. But human eyes don't use to see videos as moving photos because we can only see 20 frames per second. So we can't perceive the effect directly. But stroboscopic effect is a way you see it. Ever saw a fan starting in tubelights light and see it rotating in opposite direction for sometime? That's when you see the problem of blinking.
