It zigzags. It doesn't curve, because that would be harder to define mathematically, with the result that it would cause more confusion.

It zigzags mostly for the same reason that other time zone boundaries zigzag, which is to allow places which have a close relationship with each other and which people frequently travel between or otherwise coordinate between to have the same local time as each other so that people don't have to reset their watches any more than necessary.

With the international date line there is also another reason for it zigzagging, which is to minimise the problem of it being different days of the week.
