Due to the absence of cellulose digesting bacteria in our body which used to be functional in our ancestors

it is polysaccharide which composes of many monosacharide units of glucose...since humans do not posses such enzymes which can hydrolysis such a polysaccharide into monoscharide it is not nourishable in our diet...
